I figured out how to post pictures (I think....)
A good way to start the day -- a quilting/design project and a nice cup of tea (in my favorite "I Love Lucy " mug) and a Weight Watcher friendly scone (well, it's supposed to be a scone, but the batter is a little too gooey so I just put it in muffin cups -- but they sure are GOOD !) I got the original recipe from "Fig Tree Quilts" new "Fresh Vintage" publication. (I just made a few substitutions to make it low fat, etc.) Here is the recipe if you'd like to make some.
British Scones:
Ingredients:
2 1/2 cups unbleached flour
1 tsp baking soda
2 tsp baking powder
3/4 tsp salt
5 Tbsp powdered buttermilk (found in the baking aisle)
1/3 cup Splenda
4 oz (i.e. 1/2) cup Blue Bonnet Light margarine
4 oz (i.e. 1/2 ) cup nonfat neufchatel cream cheese
3/4 cup yellow raisins
1 cup cold water
Preheat oven to 400 degrees. Sift all dry ingredients together. Add the margarine and cream cheese and mix together until it looks like bread crumbs. Add the raisins. Add the cold water. Spoon mixture into paper lined muffin/cupcake pan. (makes 14 muffins). Bake 12 -> 14 minutes. WW points = 2/muffin. ENJOY !
