It's the Great Pumpkin....uh.....Zucchini , Charlie Brown!

Happy Friday night Blogland Neighbors! Today is October 3rd ..... every year on this date , as soon as it's dark and the moon has risen in the night sky .....


....The Great Zucchini sprouts wings and flies up from the zucchini patch where it has been silently growing underneath the zucchini leaves until it is STINKIN' HUGE!!!..... hmmmmm...... oh.... wait ... that's The Great Pumpkin and it rises up from the pumpkin patch on Halloween Night .... Well, anyway, I think a new story could be written about a "Great Zucchini" cause look at the size of this thing......
...it's so big ....


...that Kitty can drive her car on it! (Matt brought this home from his friend's house where they seem to have an abundance of super sized zucchinis). Anyhow, what does one do with a zucchini of this size? Well, first of all, give half of it away!! (and, Dad, I know Mom isn't reading this since she doesn't know how to work the computer, so please tell her NOT to make us any zucchin bread from her half of the gigantic zucchini because I just made 2 loaves!!! So, tell Mom to share with Franny and Babs! Thanks!)

....so, like I was sayin', I, well, we (you know who helped) decided to make some zucchini bread ....


.....and look! we grated the 2 cups of zucchini that we needed to make 2 loaves of bread and we STILL had a big whoppin' chunk of the zucchini left over!! What the heck are we gonna do with that?


....so, anyway, here are the 2 loaves of zucchini bread fresh from the oven ...


...let's sit down for a minute and put our feet up and relax with a cup of tea, a piece of the zucchini bread and the latest issue of American Patchwork and Quilting magazine that came in the mail today .....phew! I'm pooped! Glad it's Friday!

grate it and freeze it. One day in February you can make more zucchini bread and eat a slice while reading your seed catalogs.

Here's what I would do: Take the shredded zucchini and saute it in a frying pan with a little olive oil (just a dab), cook until tender, drain out the excess water, melt a little butter in the pan, toss back in the zucchini, add some parmesan, salt and pepper to taste. Voila!

Zucchinis should come with a warning label because they regenerate over night!!! Night of the living zucchinis!!! Just watch, you'll have two zucchinis tomorrow sitting on your front porch....

Try making zucchini parmesan! Really, I like it better than eggplant and it uses up the zucchini. That Miss Kitty cracks me up! Have a great weekend. Cheers.
